Coconut Party: Macaroons and Pancakes

Do you love coconut? These treats are easy and delicious to make, they are the ultimate coconut treat. With only a few ingredients, you can make these snacks and enjoy them guilt-free with some fresh fruit!

    coconut milk

  • 295

    ml

    coconut or vegan condensed milk

  • 425

    rice flour

  • 80

    coconut blossom sugar

  • ml

    coconut oil

Vegan Coconut Macaroons

1. Preheat the oven to 160°C
2. Mix the coconut and 325 ml coconut milk in a mixing bowl.
3. Line parchment paper on an oven tray
4. To get the round shape, use a cookie scoop to scoop the coconut mixture onto the parchment paper. Use your hands to pat them into a dome shape
5. Bake for 20 minutes until they are crispy on the bottom and lightly browned on the top.
6. Let them and cool.
7. *optional: serve with some fruit so create the perfect snack!

Small coconut pancakes

1. In a mixing bowl combine the coconut blossom sugar, 500 ml coconutmilk and rice flour.
2. Add a pinch of salt and the water and mix until you have a smooth batter
3. Bring a flat pan to medium heat.
4. When the pan is hot use a small amount of batter to create small pancakes. More than one should fit on the pan. Let them bake for around 4 minutes or until ready and flip.
5. Serve them hot!

The recipe can also be used to make vegan/coconut poffertjes using a poffertjes pan!
