Korean baked mac n’ cheese: 2 ways

Recipe

This recipe starts by making the base sauce. After you can choose which flavors you want to add to your dish.

Preheat oven to 180 C.

Cook macaroni till al dente, and divide the macaroni pasta.

To make the base sauce start by heating some oil in a medium-sized saucepan. Add in the chopped garlic, onions, soy sauce, Cajun spice, and mustard powder. Remove from heat once caramelized.

In a blender, add this garlic-onion mixture, cashews, salt, pepper, mustard powder, Cajun spice, soy sauce, nutritional yeast, milk, and 1/4 cup of the vegan cheese and blend till it becomes smooth. Taste and adjust according to taste.

Gochujang Mac n' Cheese

You chose the spicy option! Add 1-1.5 tbs of gochujang sauce, or according to heat preference. You can also add some chili powder or chili flakes for that kick but ask the others how much they can handle spicy food. Add 1/2 tsp of lemon juice to the sauce. You want the sauce to be a bit redder than it used to be.

Now in a bowl, fold in the macaroni into this sauce until all pasta is coated in the sauce. Put it all in a buttered glass dish. Top it off with some cheese and panko breadcrumbs. Sprinkle some salt and pepper on top as well. Bake for 15-20 minutes or until golden brown.

Chop up some spring onion, and sprinkle on top for that Asian flare!

Mac and Kim-cheese

Chop the kimchi. Fold it into the base sauce. Add chili powder and Cajun spice into the sauce(kimcheese mixture).

Now in a bowl, fold the sauce into the macaroni until fully coated. Put it all in a buttered glass dish. Top it off with some cheese, vegan butter, and panko breadcrumbs. Sprinkle some salt and pepper on top as well. Bake for 15-20 minutes or until golden brown.

Chop up some spring onion, and sprinkle on top for that Asian flare!
