Making your own poke bowl is easy and gives you also the possibility to play with ingredients. You dont have carrots at home, use paprika, no edamame, use fava beans. As long as you have a good dressing, it will taste like Hawaai..

For two bowls
Cut the red onion in thin half rings. Put it in a small bowl, add ½ tsp salt and 1 tbsp vinegar. Let it sit for 15 minutes.
Cook the rice or quinoa 10 minutes.
Roast the walnut and/or pumpkin seeds dry in a non-stick fryingpan
Cut the seitan in long thin slices. Fry or deep fry crispy. If you are using a Toko-seitan (which you buy at oriental supermarkets), leave it like that (because it is already marinated). If you are using a Health Store/organi supermaket seitan, make a marinate with 1 tbsp tamari/soy sauce and 1 tsp rice syrup and leave it in this marinade about 10 minutes.
Cut the carrots and radishes in thin slices. Place them together with edamame in a steam basket/steam oven and steam about 5 minutes. Or cook it in hot water.
Cut the avocado in nice thin slices in the length.
Make the dressing: Mix in a bowl tahini, vinegar, miso (or salt) and lemon juice.
Cut the nori 4 pieces or in any shape you like.
Make your bowl: Put the cooked rice/quinoa in a big bowl. Top it nicely side by side with all elements: edamame, seitan, radishes, carrots, red onion (without the vinegar) and avocado. Pour the dressing. Decorate with roasted walnuts/pumpkin seeds and nori sheet.
