This delicious greek pastry is originally made with butter, feta cheese and spinach. In this recipe we replace the butter with beautiful olive oil. Don’t forget to use good organic olive oil to get all health benefits out of it. Cheap olive oil is mostly warm pressed, thereby loses most of its healthy elements.

    Sheets of loempia or puff pastry

    Kale or spinach, minced without the vein

Fry the chopped onions in heated oil 5 minutes. Add kale/spinach and tofu and fry another 3 minutes. Turn the heat off. Mix with turmeric, yeast flakes, lemon juice, salt and peper.

Cut the loempia sheet in two diagonal pieces. Fill them with the kale/spinach filling.
Mix ½ ts turmeric with 2 tbs oil. Brush the filled sheets with this. Bake 15 minutes in the oven at 220 C. If you are using puff pastry, 10 minutes.

If you don’t have an oven, you can also deep fry them if you are using loempia sheets. Don’t do this if you are using puff pastry. You will then taste only oil…
