1 small pumpkin
1 cup walnuts
2 tbsp rice or mapple syrup
2 cups flour
½ cup almond flour
250 g margarine
¼ cup rice syrup
pinch of salt
Put both flours in a mixing bowl. Knead with pieces of margarine. Add rice syrup and salt. Knead further until smooth.
Cover a baking tin with greaseproof paper. Spread the dough in a thin layer. Bake it 15 minutes in an oven at 180 degree C.
Cut the pumpkin in long thin slices. Peel the hard skin. Cook 5 minutes with a little bit water.
Take the pie bottom out of the oven. Decorate with cooked pumpkin slices and crushed walnuts. Sprinkle rice syrup on top and bake 5-10 more minutes in the oven at 180 degree C.
