Veggie Tagine with Couscous

    chopped red onions

  • 1

    chopped garlic cloves

  • 1/2 tbsp ground cumin

    ground corriander

  • 1/2 tbsp ground cinnamon

  • 1

    red pepper, seeded and chopped

  • 1/2 courgette, cut in small pieces

    pumpkin, cut in small pieces

    tomatoes, chopped

    chickpeas tin, rinsed and drained

    vegetable stock

    tomato paste

    prunes, pitted and sliced

Repice

  1. Heat 4 tbsp oil in a big pan. Fry the onion and garlic for 5 minutes. Add the spices and fry for a minute until fragrant. Add the pumpkin, courgette, and fry for 8-10 minutes until they’re coated in the spices and start to take on some colour
  2. Add the tomato paste, stock prunes and simmer for 15 minutes until the vegetables are tender. Add the chickpeas, and cook another 5 minutes. Taste,  season with salt and pepper if necessary.
  3. Meanwhile make the couscous: 
  4. Pour 400 g couscous in a pan. Pour cooking water, just to cover the top. Put the lid on and let steam.
  5. Serve the couscous with veggies on top.
