Ingredients
1 cup of flour (of your choice)
2 tbsp rice syrup
1 tsp baking powder
pinch of salt
pinch of cinnamon
1 cup of plant-based milk (preferably almond milk)
1 banana, mashed
1 cup of fresh or frozen blueberries, plus extra for topping
soy margarine
1 orange, sliced in wheels (without the skin)
Preparation
In a mixing bowl, sift together the flour, baking powder, salt, and cinnamon.
In another bowl, mix together the almond milk, 1 tbsp rice syrup, and mashed banana.
Combine the both bowls. Add the blueberries and mix.
Heat a skillet to medium heat. Smelt 1 tbsp soy margarine. Bake both sides.
Top with blueberries, orange slices and extra syrup if needed.
