Ingredients
750 g extra firm tofu
1 tbsp roasted sesame oil
2 medium tomatoes
2 small shallots
3 cloves garlic
1/2 tsp salt
1 tsp coconut blossom sugar
3/4 cup water
2 fresh red chili peppers
Preparation
Slice the tofu into squares and fry them in oil until crispy. Transfer into a bowl without the oil.
Chop garlic, shallots, red chillies and tomatoes into small cubes and fry them in the same pan with sesame oil until they are soft and mushy about 15 minutes.
Add them to a high speed blender. Blend until you get a smooth paste.
Add the paste into tofu cubes. Saute for a few minutes.
Then add salt, and coconut blossom sugar. Stir until well combined.
Serve as it is, or with some spring onions / coriander.
