3 medium, very ripe bananas
¼ cup melted coconut oil
¼ cup coconut blossom sugar
1 tbsp flaxseeds
1 teaspoon pure vanilla extract
2 cups flour
1 tsp baking powder
½ tsp baking soda

Preparation

Ground the flax seeds in a mortar. Mix with 3 tbsp water, set for 15 minutes.
Preheat the oven to 180°C.
Line a 12-cup muffin pan with muffin liners.

Mash the bananas in a bowl. Add the oil, sugar, flax seeds, and vanilla. Whisk until well incorporated. Add flour, baking powder, baking soda or salt. Whisk wel. Add blueberries gently. Pour in muffin cups. Fill until ¾ full.

Bake about 15 minutes.
